Yesterday we did some Xmas Cooking. We made pink and green coconut
mice. They were easy to make and yummy to eat. Check out the recipe below if you want to make them at home.
CHRISTMAS MICE
250g icing sugar,sifted
200g tin of condensed milk
175g desiccated coconut
red/green food dye
sweets for ears,sliver cake decorating balls
liquorice bootlaces
- Mix the icing sugar and condensed milk together in a bowl. Mix in the coconut. Put the mixture into two bowls.
- Add a few drops of red/green dye to each bowl and mix it in.
- Dip a clean tablespoon into some warm water and let it drip a little. Then ,lift out a big spoonful of mixture.
- Pat the spoonful smooth on top. Turn the spoon over and put the shape onto a piece of plastic foodwrap.
- Pinch a nose at the thinner end of the spoon shapes, add sweets for ears and silver balls for eyes.
- Push a piece of liquorice under the shape , as a tail. Leave the mouse to harden on a plate.
